Snug Harbor Wine

Flank Steak

Serves 4

What to Pair With

Flank steak with chimichurri pairs beautifully with a Malbec from Mendoza. The wine’s ripe blackberry and plum flavors balance the sauce’s bright herbs and garlic, while smooth tannins complement the grilled steak. A touch of spice and smokiness ties it all together for a classic, easygoing pairing.

Here’s a quick recipe to keep in mind for grilling season. A simple marinade for steak combined with a flavorful recipe for a spicy salsa called chimichurri from Argentina. Enjoy!

Ingredients

Steak marinade:

1 flank steak
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup olive oil
1 garlic clove, minced
1/2 lemon, juiced

Chimichurri salsa

1/2 shallot, minced
1 garlic clove, minced
1 cup parsley, chopped
3 tbsp red wine vinegar
3 tbsp olive oil
1 tsp red pepper flakes
1 tsp salt
1tsp dried oregano

Preparation

Place the steak in a large ziptop bag with marinade for 2-4 hours.
Grill or sear the steak for 5 min per side.
Set steak aside while preparing the salsa.
Prepare the chimichurri ingredients and serve with sliced steak.
