Aglio e Olio

What to Pair With
Garlic and oil. That’s the ingredient list along with pasta to make one of the most basic dishes in the Italian cookbook. Beloved for it’s simplicity, this is a comforting recipe that is also the foundation for other recipes.
I make my own tweaks to this meal all the time and here I added sliced red peppers and chili pepper flakes. Once you’ve mastered this, you have the basic recipe for shrimp scampi, linguini with clams and pasta primavera. Enjoy!
Ingredients
1 large red pepper, cut into strips
Olive oil
4-8 garlic cloves, peeled and sliced thin
2 tsp chili flakes (add more to your preference)
1/4 cup parsley, chopped
2 tsp salt
1 lb linguini or spagetti
Preparation
Prepare a large pot for the pasta.
Begin to cook the pasta according to directions. Plan to remove 2 min before final cooking time.
In a large skillet over medium heat, add a tablespoon of oil.
Add pepper and cook 5 minutes.
Add garlic, chili flakes and 2 tablespoons of oil.
Cook until the garlic is fragrant, about 3 min.
Use a ladle and transfer a scoop of pasta water to the skillet.
Reserve another scoop of water.
Drain the pasta and add to the skillet, continuing to cook the pasta.
Add more pasta water as needed.
Remove from heat and add parsley and salt.
Stir to combine.
Serve.
